Most of the recipes I have seen for Banana Waffles have loads of extra sugar and oil. Why? If you add brown almost black bananas they are plenty sweet and I think they browned and crisped up just fine. Plus you taste banana and not sugar. My little taste tester devoured them instantly so I’d say these are a hit.
And a bonus, this is a quick and easy use for those overly ripe bananas sitting on your counter. Oh, maybe they only hang out on my counter…
I used my homemade baking mix, but any baking or pancake mix will do. Just a reminder if you use one that is Gluten Free make sure it has a leavener in it or be sure to add it (many all purpose GF mixes do not contain leaveners).
If you want to make them even healthier use half white and half whole wheat flour or add some bran or flax seed.
