Fall Harvest Pancakes – Tasty Tuesdays Linkup

It is time for another Tasty Tuesdays Linkup and I am so excited to be co-hosting again. We had so many awesome recipes last week my Pinterest boards are stuffed. Before we get to the link up though, I want to share with you one of my favorite Autumn breakfast recipes. Now that the heat is finally (hopefully) behind us here in Southern California I am ready for these healthy Fall Harvest Pancakes to start my cool Autumn mornings. They are loaded with protein from the ricotta and egg, or you can serve them along with some bacon or sausage or ham (yum!) to round out the meal. Use any squash and apple you want. I had a little acorn squash puree in the freezer and a Gala apple so that’s what I went with. I love the spices and the slight nuttiness from the whole wheat flour. Drizzled with maple syrup, these are one of my favorite ways to get going on a cool morning.

Healthy whole wheat protein packed pancakes with squash, apples, ricotta and plenty of spices make a scrumptious Fall Breakfast.


  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (freshly ground is best)
  • 1/2 cup ricotta
  • 1/2 cup squash or pumpkin puree
  • 3/4 cups milk
  • 1 Large apple (grated)
  • 1 teaspoon vanilla extract
  • 1 Large egg
  • 1 tablespoon maple syrup or honey


In medium bowl, combine flours, salt, baking powder, baking soda and spices, stirring with a whisk.
In a separate bowl combine remaining ingredients. Add liquid ingredients to the dry ingredients and mix until well blended.

Spray a non-stick griddle with the cooking spray and cook the pancakes over medium-high heat.
