Sage Pork and Potato Bake plus Tasty Tuesdays Linkup

Necessity is the mother of invention and that plus laziness is the mother of this recipe. I wanted something simple for dinner with what we had in the kitchen so I started rummaging through the kitchen to see what I could put together.

I found a pork loin, an apple and some potatoes. BINGO! An onion, fresh sage from the garden and the usual EVOOS&PTT (extra virgin olive oil, salt and pepper to taste) and dinner was in the making: Sage Pork and Potato Bake.

I peeled the potatoes, apples and onion:

Then chopped everything up:

Put it in a casserole dish and tossed it with the olive oil and a bit of salt and pepper. Which I forgot to photograph, oops!

Then I baked it. The sage made the whole house smell like a campfire. YUM!

Mix and match with what you have on hand. I could have gone with fresh rosemary, but there are four sage plants between the back door and the rosemary bush. If I had more potatoes I would have added more and maybe some turnips too.

The recipe below should really meant as just an inspiration.

Serves4-6

Easy Sage Pork and Potato Bake - Pork and Potatoes baked together with apples, onions and sage for flavor.

Ingredients

  • 1lb pork loin
  • 1lb potatoes
  • 1 apple
  • 1 onion
  • 2 sprigs fresh sage
  • 2 tablespoons olive oil
  • salt and pepper to taste

Note

Feel free to add more or less of any ingredient. Next time I make it I will probably add another apple and a few more potatoes. Baking time may take longer.

Directions

Preheat oven to 400 degrees. Peel potatoes, apple and onions.

Chop ingredients.

Put in a large covered casserole dish (or 13 x 9 inch pan with aluminum foil to cover it). Toss ingredients with olive oil, salt and pepper.
Bake covered for 40 minutes, stirring after 20 minutes. Remove cover and bake until potatoes are soft and top layer is brown. Do not over cook pork or it will dry out.

    I cannot comment on you dish as I’m a vegetarian, and even if I weren’t – we’re not allowed to eat pork (religious reason). So believe it or not – I don’t even know what pork tastes like 🙂
