Red Eye Gravy plus other Coffee Recipes (and Tasty Tuesdays Link Up Party)

I am a coffee drinker. Home brewed usually, or at a local coffee shop with friends (I’m too cheap for THE coffee place). Usually just one cup in the morning with a little half and half and some stevia. How about you?

I also like to cook with coffee. It’s dark rich earthiness adds a great flavor to many dishes. And if you add just a pinch it intensifies chocolate flavor yet is so subtle coffee-haters won’t notice it like in the Black Bean Coconut Brownies.

I have also put it in stew (delicious) and used it to make Red Eye Gravy. Those of you from the South are nodding, while everyone else may be lost. Red Eye Gravy is nothing more than ham or bacon fat and coffee. No thickener, just a thin meaty, salty sauce. I know, it sounds weird. But trust me it is amazing! And ridiculously simple.

You can serve it with ham steaks for dinner, or make it with bacon grease (oops, I mean “rendered bacon fat”) and serve it with some of my favorite Homemade Refrigerator Biscuits like I did.

Red Eye Gravy

Cook time5 minutes
Meal type Condiment
Red Eye Gravy - simple gravy made with coffee and rendered ham or bacon fat. Southern food.

Ingredients

  • 2-3 tablespoons rendered bacon or ham fat
  • 1/3 cup coffee

Note

The amounts are what I used to take the photo and are estimates. Most Southern cooks won't take the time to measure something like this. If you cook some bacon or ham, save all of the drippings and mix with coffee until it looks "about right".

Directions

Melt bacon or ham fat in a pan and add coffee. Simmer for 3-5 minutes. It will be thin and fat will float on top when served.
