I am teaming up with other Food Bloggers today for a tribute to the great state of Texas in the aftermath of Hurricane Harvey. We are each posting our favorite Texas recipes and encouraging people to contribute what they can to assist those affected by both Hurricane Harvey and Hurricane Irma. (We will be back soon with a tribute to the Gulf States).

Personally I am splitting my contributions to the general funds of major charities (American Red Cross, Catholic Charities, etc.) in addition to the Hurricane specific collections. Why? Last week everyone was donating to Hurricane Harvey specific charities. Now Irma is upon us and money donated specifically for Harvey might not be able to be used for Irma or any other disasters that should happen to arise next week. Just something to keep in mind.

You can find Cousin Linda’s biscuit recipe here. Or use your own favorite recipe or buy the refrigerator ones at the store. But, Linda’s recipe is pretty awesome.

Country Gravy

Traditional Southern Country Gravy made with sausage or bacon. Great on biscuits, country fried steak, etc.

Ingredients

  • 1lb sausage or bacon
  • 1/4 cup flour
  • 3-4 cups milk
  • salt and pepperr (to taste)

Directions

Chop bacon or crumble sausage depending on which you are using. Cook in a large saucepan over medium. DO NOT pour off grease.
Add flour gradually, stirring constantly. Cook for a minute or two.
Gradually whisk in 3 cups of milk. Cook until gravy thickens. Add additional milk to thin as needed.
