Bell Pepper Rajas

This is colorful, quick and delicious.
 

½ cup each green, red and yellow bell peppers, seeds and membranes
    removed
¾ grated Monterey Jack cheese with jalapeno peppers (may be sold as
    Pepper Jack)
 2 tablespoons chopped ripe olives

 


 

Cut peppers into bite size pieces, about 1 to 1½ inch. 

Place on microwave safe serving dish in single layer with skin side down.  Sprinkle cheese and olives evenly over the top.  Cover with loosely with wax paper.  Microwave on high until cheese is melted, about 1½ to 2 minutes depending upon the power level of your oven.  If you oven does not have a turntable rotate the dish one quarter turn after 1 minute.  Do no over cook; the peppers should remain slightly crisp.
