"Go Tell"   Guacamole

Fool your family and friends with this one.  Great for taking to a potluck or party.  It won't turn brown.

Make your favorite guacamole recipe and substitute one can of green peas, drained, for each avocado or try this one.

  ¼ small red onion, chopped coarsely
   2 cloves garlic
   1 tablespoon olive
  ¼ cup lime juice
  1 can green peas, drained
  1 ripe tomato, chopped finely
   2 ounces canned diced green olives
      pepper and salt to taste.  (Go easy on the salt until you taste after chilling since there is salt already in the peas.)

Place onion, garlic, olive oil and lime juice in food processor.  Pulse on and off until onion and garlic are finely chopped.   Add peas and process, again with pulse button to blend.  Remove from food processor.  Stir in tomato and green chilies and toss lightly with a fork.   Refrigerate to chill about 1 hour; add salt and pepper to correct the seasoning.   Place in serving dish and garnish with fresh chopped cilantro.  Serve with corn chips.
