Ice Cream with Raspberry Sauce

The amounts listed are for 1 serving.  Not sure that anyone is satisfied with a ½-cup serving of ice cream, but that is the serving size listed on a carton of ice cream in our freezer.  We won't stop you from enjoying a larger size serving: but if you do, you may want to increase amounts for the raspberry preserves and lime juice.  Other berry preserves and nuts may be substituted according to individual taste.

 

 1 tablespoon raspberry preserves
 1 teaspoon fresh squeezed lime juice
½ cup vanilla or chocolate ice cream
    chopped pistachios for garnish, optional
 

 

Mix preserves and lime juice together in a small bowl.  Scoop ice cream into serving dish and top with raspberry sauce.  Sprinkle with chopped nuts.

Variation

Add fresh or canned freestone peach slices before pouring the sauce over ice cream.  (Elberta peaches are one variety of freestones.  Cling peaches are fine, but we are partial to the taste of freestones, especially when canned.)
