Lime Gelatin with Pineapple and Cheddar Cheese

This was my mother's standard dish for potlucks.  It is very refreshing, great on a warm day, and not too sweet.  
 

1 8-ounce can crushed pineapple
1 3-ounce package lime flavored gelatin
    1 cup mild cheddar cheese, grated
1 tablespoon mayonnaise
   maraschino cherry
   sprig of fresh mint, optional
 

Drain pineapple and reserve liquid.  Grate cheese and set aside.  Prepare gelatin with one cup boiling water.  Stir until all gelatin is dissolved.  Add reserved pineapple juice and enough cold water to make 2 cups.  Let cool until room temperature to prevent the cheese from melting.  Pour in crushed pineapple and sprinkle cheese over top.  Stir together until all ingredients are mixed.   Pour into 1 1/2 quart glass (Pyrex-type) dish, cover and chill until gelatin is set.  To serve, garnish with a dollop of mayonnaise and top with maraschino cherry and a sprig of fresh mint.
