Poor Boy Sandwiches

 

There are no rules for this.  You can use whatever you or your guests prefer.  Make several different combinations and let people mix-and-match.

 
large French sandwich rolls, about 1 per person
assorted sandwich meats, sliced beef, ham, turkey *
cheese slices, use several different kinds *
mayonnaise
mustard
sliced tomatoes
dill pickles, sliced lengthwise
thinly sliced red onion
diced green chiles or pepperocini

* Use 3 to 4 ounces of meat and cheese per person.  Make some sandwiches with all cheese for the vegetarians in the crowd.

Cut rolls in half lengthwise.  Spread with mayonnaise and mustard.  Spread two or three layers of different sandwich meats and cheese on bottom half.  Add your choice of tomatoes, pickles, onion and peppers.  Cover with top half of bread and cut in half crosswise.  When serving buffet-style it would be a good idea to wrap sandwiches tightly, deli-style with waxed paper or deli wrappers before cutting.  Store covered on serving dish in refrigerator until time to serve.


Add a little "zip" by using your favorite barbecue sauce with or in place the mayonnaise or mustard.
