Tortilla Roll Ups

   6 plain flour, spinach or tomato tortillas
   6 ounces softened cream cheese or 3/4 cup
      mayonnaise

optional additions:
  2 tablespoons horseradish
  6 cloves, finely minced garlic
  2 tablespoons finely chopped fresh parsley
¼ cup chopped fresh dill weed or whatever you like
Mix and match fillings from the following or make up your own:

 1 cup fresh spinach leaves
 1 cup fresh basil leaves
 6 large pieces of lettuce

½ pound smoked salmon slices
 ¾ pound thinly sliced sandwich meat--roast beef, ham,
     bologna, pepper loaf, cheese of your choice, etc.

Mix cream cheese or mayonnaise with your choice of "optional additions" or with nothing.  Spread evenly over tortillas.  Layer with choice of spinach, basil, or lettuce plus meat and cheese.   Roll up each as tightly as possible and roll each with a piece of plastic wrap.  Refrigerate several hours or over night until serving time.  Cut each wrap into 8 pieces and secure each with a toothpick.
