It is time for the Crazy Ingredient Challenge, that wonderful day every month when a group of bloggers gets together with two ingredients not normally paired together and each attempts to make a recipe with them. The ingredients we voted in this month were garbanzo beans (chickpeas) and honey. Now there’s a challenge!
I came up with these healthy Honeyed Chickpea Blondie Bites.

The inspiration for the recipe came from the Chickpea Blondies at Live Eat Learn. I made quite a few alterations to not only add the honey, but I wanted brownie bites (well, blondie bites actually, but…) .
These are incredibly soft when they first come out of the pan. As you can see.
Be sure to use non-stick spray even if you have a non-stick pan. I actually had to toss the first batch because I could not get them out of the pan.
The last step is optional, but the caramelized honey glaze on the top makes these divine.
