If desired you can add some of the following to the batter:
2 tablespoons chopped walnuts
2 tablespoons mini chocolate chips
1 tablespoon brown sugar
In a small bowl, or food processor/blender, thoroughly mash banana. Combine with all other ingredients until just blended. Bake in waffle iron according to manufacturer's directions. Makes 3-4 8 inch waffles.
For pancakes, omit the oil and cook on hot griddle.
