Shake it up, all you’ve got, woo

A mere month ago I wrote that my son begged for PB and J sandwiches for lunch most of last school year. Murphy must have gotten to him, because now he is refusing to eat them, along with just about every other sandwich I have sent. Ugh! Now, I have to get creative.

A few things I have sent the past week:

  • Cheese Spread and Crackers with a popsicle stick for spreading

    homemade “handi-snacks”. Used the Pimento Cheese recipe and just left out the pimentos.

  • homemade “lunchables” using my mini cookie cutters to cut up the bread, turkey slices and cheese.
  • mac n cheese in a thermal container. Make a quick white sauce, throw in some grated cheese and mix with leftover pasta (you can do it the night before and then heat in the microwave then put in the container to still be warm at lunch)
  • Peanut Butter Balls rolled in graham cracker crumbs

    Peanut Butter Balls and crackers. It isn’t the peanut butter he is sick of if the way he snarfed these babies down was any indication. I froze the balls and by lunch time they had thawed but hadn’t gotten mushy.

Other ideas I am toying with are quesadillas, leftover pizza (he likes it cold like me!), chicken nuggets, rice balls.
