Ingredients

olive oil

garlic

fresh oregano leaves

low sodium organic tomato sauce

cups
celery, thinly sliced or chopped

cups
chicken or vegetable stock

tablespoon
brown sugar
salt and pepper to taste
Instructions
In a skillet heat olive oil over medium heat and saute garlic for about 1 minute. Add herbs and saute another minute.
Stir in the tomato sauce. Add celery and stir to coat.
Cover and reduce heat to medium low. Simmer about 10 minutes, stirring about halfway through.
Add brown sugar and stock. Continue simmering until celery is done to your liking.
Add salt and pepper to taste.
Notes
If fresh herbs are not available you can use 1 teaspoon dried for 1 tablespoon fresh herbs.
