    Foil Wrapped Salmon and Vegetables

    Confession time: I am afraid to cook fish.

    If I mess up $3 a pound chicken I can somewhat come to grips with that. But, $19 a pound salmon fillet. No way! I would be devastated for days.

    While strolling through the store this week I spied a wild caught Keta salmon fillet for about $6 a pound. Okay, let's do this!

    I had been thinking about making "something" in foil packets one of these days. So last night was the night for both: Foil Wrapped Salmon and Vegetables.There isn't much to say about this that you can't pick up in the recipe. It is easy, healthy, quick cooking and pretty much fool proof.

    I went light and simple on the marinade because I wanted it to accent the salmon not overpower it. The vegetables were what was in the fridge.

    Serve it with rice or couscous, like I did.

    From start to finish I was out of the kitchen in under an hour, mostly hands off time during the marinating and baking. The fish was perfectly moist and flaky. The vegetables were soft, but still had a nice crunch.

    Add to that clean up was a breeze: toss the foil and rinse out the pan.

    I feel so confident, I might try tackling my next cooking fear: PASTRY CRUST.

      Stopping by from Say G'Day Saturday. I totally agree with your hesitation to cook fish. I'm always afraid I'll screw it up too. This salmon looks yummy AND easy though. My two favorites! Pinned!
