This was our first full week of Dad back at Summer School, so that meant three long days teaching for him and three long days of hearing "When is Dad going to be home" for me.

And here on That Recipe we had our monthly Crazy Ingredient Challenge with Spinach and Blueberry recipes. I went with these Mutant Muffins (actually Lemon Blueberry flavored and spinach colored). They were delicious and nutritious! But you should see the creative ways others used the ingredients.
