Mini Marshmallow Snowmen are a cute and simple treat to make for the holidays with basic ingredients: mini marshmallows, candy coating and fruit rolls. Google+ was so excited about the pictures I uploaded from my phone that it "auto awesome"d them with a snow falling effect. Whatever.
I used vanilla chips instead of candy coating and it was a little thick for dipping so I smeared it on the marshmallows instead of being able to just dip them. Which is why there is no picture of that step because my hands were a mess. In hindsight, I probably should have used a little melted coconut oil to thin it, which would have still set hard at room temperature. But, I honestly didn't think of it until just this minute.

This could be a fun project for the kids to make for their teachers or friends. Use your own common sense as to whether or not they can handle melting the coating or using the knife to cut the fruit roll ups.
You can leave them on the toothpicks to decorate cakes or gingerbread houses, etc. Or take them off to serve more like a candy, especially with young children where the toothpicks could be a safety hazard.
