We have a rainbow-licious St. Patrick's Day theme with the features this week. I think we all need a few more rainbows in our lives these days. Though I could do without the rain that goes along with them - after years of drought all of this rain takes some getting used to.
When I think of Ireland I think of potatoes, like this Easy Cheesy Potato Casserole that I shared this week. It makes a great holiday side dish and is delicious as a meatless meal too.
