15 ouncecan chickpeas(drained with liquid reserved)
½cupcooked spinach
6tablespoonstahini
3tablespoonslemon juice
2tablespoonsolive oil
1-2clovesgarlic
¼cupgreen onion tops(chopped)
¼cuproasted red pepper(chopped)
salt and pepper to taste
Instructions
In a blender or food processor, add chickpeas, spinach, tahini, lemon juice, olive oil and garlic.
Pulse a few times, then scrape down. Blend until mixture is an even creamy texture. Thin with reserved chickpea liquid if needed. Taste, add salt and pepper as needed.
In a small bowl combine green onion tops and roasted red peppers. Fold half of this into the hummus. Use the remainder for decorations on top before serving.
