Instructions
Preheat oven to 350°F. Line baking sheets with parchment paper or silicon baking mats.
In a large mixing bowl beat butter and sugar with an electric mixer until fluffy and light, about 3-5 minutes pausing to scrape bowl a few times..
Beat in egg, milk and vanilla.
In a small bowl combine lime zest and crushed pink peppercorns. Reserve ¼ teaspoon for icing.
In a medium bowl whisk together flour and baking powder and all of the lime zest and peppercorns
except ¼ teaspoon
.
Slowly add dry ingredients into butter mixture on medium speed just until incorporated.
Scoop by tablespoonful onto prepared baking sheets leaving 2 inches between.
Bake until light golden brown, about 10 minutes. Remove cookies from pan to a cooling rack to allow cookies to cool completely.
When cookies are cool, combine powdered sugar, ¼ teaspoon lime zest and peppercorn, and lime juice. Spread glaze over cookies and allow to set.
