Beat egg whites and cream of tartar in a large mixing bowl until they form stiff peaks (the mountain formed when removing the beater stays standing straight up).
Beat in powdered sugar. Divide Icing into separate bowls as desired and add extracts and coloring as desired.
Scoop icing into piping bags fitted with a narrow tip or in plastic baggies with a corner snipped off (keep it small, you can make it bigger if you chose).
Cut parchment paper to cover the template and apply a dab of icing to cover each dot.
Set in a safe place to dry completely. This depends on heat and humidity, mine were dry in just a few hours. Store in zip to lock bags.
