Crispy Grilled Potatoes with Buttery Vegan Mayo Sauce

Ingredients

Vegan Buttery Mayo Sauce

  • 1 cup vegan mayonnaise
  • 2 tablespoons Barleans Butter Flavored Coconut Oil melted
  • 1 tablespoon chopped fresh herbs such as chives, rosemary, oregano, basil

Potatoes

  • 1 pound potatoes
  • 2 tablespoons Barleans Butter Flavored Coconut Oil melted
  • 2 tablespoons chopped fresh herbs such as chives, rosemary, oregano, basil
  • salt and pepper to taste

Instructions

  1. Preheat grill to 400 degrees. 

  2. In a small bowl, combine sauce ingredients and set aside. 

  3. Wash potatoes, peel if desired, and slice very thin.

  4. In a large bowl, toss sliced potatoes with melted coconut oil, herbs and salt and pepper. Place in a single layer on a vegetable grilling pan (see notes)

  5. If possible, grill over indirect heat. Otherwise watch carefully to prevent scorching. Grill potatoes about 5-7 minutes then flip over and continue grilling until crispy

  6. Serve hot with sauce on the side. 

Recipe Notes
