Trim about 1/4 inch fat from the ribs and chop into small bits. Turn the electric pressure cooker to saute (or in a skillet on the stove for a slow cooker) and cook down the chopped up fat until most of it has liquefied.
While the fat is rendering, rub the ribs with the seasoning.
Add the ribs to the hot pan and brown for a few minutes on each side.
Slow Cooker only: put ribs in the slow cooker. Deglaze the pan with the coffee (pour coffee into the skillet and scrap the pan to remove the browned bits of fabulous flavor).
Add the coffee and 1 cup of the barbecue sauce to the ribs. Stir to combine.
Pressure cooker: Cook at high pressure for 45 minutes and do a natural release.
Slow Cooker: Cook on low for 4-6 hours (time will vary depending on the size of your cooker).
Ladle some of the cooking liquid into a bowl and combine with more barbecue sauce for a thicker serving sauce.
