Gluten Free Chocolate Chip Zucchini Bars

These Chocolate Chip Zucchini Bars are a scrumptious guilt free treat. Gluten Free, Dairy Free, no refined sugar and vegan!

Ingredients

  • 1/2 cup almond flour
  • 3/4 teaspoon baking soda
  • 1/4 Teaspoon salt
  • 1 cup zucchini shredded
  • 1/2 cup almond butter
  • 1/4 cup solid coconut oil
  • 1/4 cup maple syrup
  • 1 flax egg (or large egg) see note
  • 1 teaspoon gluten free vanilla
  • 1/4 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray an 8 inch square or round pan with cooking spray

  2. In a small bowl, mix almond flour, baking soda and salt.

  3. In a medium bowl add almond butter, zucchini, coconut oil, maple syrup, egg and vanilla.

  4. Add dry ingredients and stir until blended. Fold in chocolate chips.

  5. Spread in prepared pan and bake at 350 degrees oven for 25-30 minutes. Start checking at about 20 minutes.

Recipe Notes

*Flax Egg – 1 Tablespoon ground flax seed mixed with 3 tablespoons of water. Let sit for a few minuted before adding to mixture.

Variations: substitute different types of ingredients for the chocolate chips such as butterscotch chips, or cranberries, raisins, or nuts.
