2poundsfresh ripe purple figs(stems removed and quartered or roughly chopped)
Instructions
Place 3 metal tablespoons in the freezer.
In a medium heavy-bottomed pot, combine all ingredients. Mixture will be dry.
Cover and bring to a boil over medium heat. Stir the mixture and boil hard for 1 minute, stirring to dissolve the sugar.
Lower the heat, and simmer for 50 minutes, stirring occasionally.
Remove one spoon from the freezer Add a small amount of the cooked preserves to the frozen spoon to cool it. Mixture should be thick and starting to gel like jelly.
If the mixture is still syrupy keep cooking and test again in 5 minutes. If the liquid is too firm, add more tangerine juice or water, cook for 1 minute, and test again.
Store in a mason jar or other container in the refrigerator.
