In a small bowl, or food processor/blender, thoroughly mash banana. Combine with all other ingredients until just blended.
½ cup very ripe banana, 1 cup baking mix, ½ cup milk, 1 large egg, 1 tablespoon oil, 2 tablespoons chopped walnuts, 2 tablespoons mini chocolate chips, 1 tablespoon brown sugar
Bake in waffle iron according to manufacturer's directions. Makes 3-4 8-inch waffles.
For pancakes, omit the oil and cook on hot griddle.
Notes
If you do not have "baking mix" you can substitute 1 cup flour, 1 ½ teaspoons baking powder, ¼ teaspoon salt and ¼ cup shortening/butter.
