Ingredients

very ripe banana
(approximately 2-3 bananas)

baking mix
½
cup
milk

large
egg

tablespoon
oil
Optional add ins:

tablespoons
chopped walnuts

tablespoons
mini chocolate chips

tablespoon
brown sugar
Instructions
In a small bowl, or food processor/blender, thoroughly mash banana. Combine with all other ingredients until just
blended. Bake in waffle iron according to manufacturer's directions. Makes 3-4 8 inch waffles.
For pancakes, omit the oil and cook on hot griddle.
Notes
If you do not have "baking mix" you can substitute 1 cup flour, 1 ½ teaspoons baking powder, ¼ teaspoon salt and ¼ cup shortening/butter.
