Dijon mustard

tablespoons
pure maple syrup

wild-caught Alaskan center-cut salmon fillets
(about 6 ounces each)
salt and pepper
(to taste)
Instructions
Preheat oven to 400℉. Place a wire rack in a roasting pan.
Combine the mustard and maple syrup in a bowl. Put the salmon fillets on the prepared baking rack and season with salt and black pepper, to taste.
Spread the mustard maple mixture on each salmon fillet. Place in pre-heated oven and roast until almost cooked through, approximately 12 minutes.
Turn the oven to broil, and broil for 1-2 minutes to caramelize the top.
