Curried Cold Rice Salad

Ingredients

Small jars of marinated artichokes
(coarsely chopped and marinade reserved)

long grain white rice
(uncooked)

cups
vegetable broth
(include the artichoke marinade above to equal total 4 ¼ cup liquid)

green onions
(chopped)
½
jar
green olives stuffed with pimentos
(sliced (7 ounce jar))

cup
mayonnaise
1
teaspoon
curry powder
chopped parsley
Instructions
Cook rice in vegetable broth and reserved artichoke marinade until tender.
Cool. Mix mayonnaise and curry powder. Mix all ingredients together and garnish with parsley.
Notes
Add 1 pound shrimp meat or chopped chicken breasts for a heartier dish.
