Ingredients

tangerines, peeled and separated in segments
(or 1 small can Mandarin oranges drained)

cooked or canned beets
(drained, patted dry and sliced)

almonds

leftover rotisserie chicken
(see note)

arugula
(or other lettuce)
Lemongrass salad dressing
(recipe below)

crunchy chow mein noodles
(optional)
Instructions
In a large bowl, combine the carrots, daikon, tangerines, beets, almonds. chicken and arugula.
Top with about ⅔ of the salad dressing and toss to combine. Add more dressing if desired. Top with chow mein noodles before serving, if desired.
Notes
For a lunch or side salad, use less chicken. For a full meal, use more chicken.
