Combining all of the ingredients except the chicken wings in a medium bowl. Whisk these together until they are well-combined and sugar is dissolved Reserve ⅓ of the sauce mixture for basting in a covered container and refrigerate until ready to bake.
¼ cup oyster sauce, ¼ cup brown sugar, ¼ cup black bean sauce, 1 cup soy sauce, black gel food coloring
Put all of the chicken wings into a large (at least gallon size or larger) plastic zip top bag. Pour in the remaining soy sauce mixture and seal the bag. Ensure wings are thoroughly coated. Refrigerate for 2 hours to overnight, massaging and turning the wings a few times.
20 whole chicken wings with the tips intact
Preheat oven to 375℉. Place either parchment paper or aluminum foil on a rimmed baking sheet.
Shake excess liquid off of wings and place on baking sheet. If using whole wings, extend them for even cooking. Discard extra marinade.
Bake for 20 to 25 minutes or until the juices run clear when pricked with a fork. Baste wings with reserved sauce every 10 minutes. Remove wings from oven and brush any remaining sauce over the wings. Move them from the baking sheet to a wire rack to cool slightly.
Notes
DO NOT USE those tubes of black writing gel used for writing on the tops of cakes. Gel food coloring adds a richer deeper color than the liquid drops. You can find them in places like Michaels, Target, maybe WalMart or online.
