1pintfresh or frozen raspberries and/or strawberries(hull and quarter or slice strawberries)
Instructions
Prepare crepes ahead of time.
In a medium bowl combine fruit and 1 tablespoon sugar more or less to taste depending on the sweetness of the berries. Set aside until ready to serve.
In a medium bowl combine ricotta and 1 tablespoon sugar more or less to taste depending on the sweetness of the berries. Set aside until ready to serve (refrigerate if not serving immediately)
To fold the crepes as pictured:put a crepe on a plate, cover with some ricotta filling, place some fruit in one quarter only, fold the half without fruit over the top and then fold the remaining half without fruit over to make the quarter fold. See blog text above for other options.
Top with a teaspoon or more of filling plus some berries. Sprinkle with additional powdered sugar or drizzle with the syrup in the bowl of berries after the are sugared.
