Hearty Ham and Potato Soup plus Tasty Tuesdays Linky Party

October is almost over and it is actually getting chilly at night the last week or so here in Southern California. And that means it is finally SOUP WEATHER!!!! The other night I whipped up this easy and filling Ham and Potato Soup for dinner. The 7 year old devoured it! Time for the Happy Mommy Dance. Woot woot!

This is basically my Grandma Ruth’s “sick soup”. Whenever someone was sick, Grandma would bring them some of her Potato and Onion Soup and it cured what ailed them. Or so the story goes… If you use leeks instead of onions and add cream it becomes Vichyssoise and you can serve it hot or cold.

I had purchased some ham steaks on sale so I just chopped one up and threw it in at the end. It would also be a great meal for leftover ham. It was ready in 30 minutes, including the extra time for my sous chef to help me peel every… last… bit… of… peel from the potatoes.

Ham and Potato Soup

  • 4 cups russet potatoes (peeled and diced)
  • 1 cup onions or leeks (white part of leeks only, greens reserved for garnish)
  • 1/2 cup celery (diced)
  • 1/4 cup fresh parsley
  • 1 cup milk or cream (optional)
  • 1-2 cup ham (cooked and diced)
  • salt and pepper to taste


Add potatoes, onions (leeks), celery and parsley to a large pot. Add stock until vegetables are covered with liquid plus a bit more on top. Cover pot. Bring to a boil and reduce to simmering. Cook until potatoes are soft enough to begin to "mush".

Mash with potato masher for chunkier soup. For more pureed soup use an immersion blender or pour all ingredients into a blender or food processor and blend until smooth.

Thin with cream or milk, if desired. Add ham. Rewarm the soup in the pot as needed.

Add salt and pepper to taste. Garnish with chopped leek greens (or parsley) if desired.

    1. I was thinking you could take the leftover mashed potatoes, add some leeks or onion, thin with some chicken stock and toss in the leftover ham.
