My Favorite Old Fashioned Gingerbread Men Cookies

Big Batch Gingerbread Men Cookies - this recipe makes a huge batch for about 30 people to make several cookies. Great for classrooms, scouts, day care

That’s a copy of the original that came home when I was in Kindergarten. I don’t remember making them that day, but I do remember making that much dough when I worked in Day Care. The large batch recipe is here. The one below is what I usually make at Christmas time, maybe doubled depending on how many I want to share.

Gingerbread Men are a nice traditional shape for these cookies. But with an 8 year old boy traditional can be boring. Enter the Ninjabread Men!

Gingerbread Men

Prep time 45 minutes
Cook time 15 minutes
Total time 1 hour
Meal type Dessert
Occasion Christmas, Winter
If the cookie dough seems a little dry before chilling add a teaspoon or more oil and molasses until everything comes together.

Ingredients

  • 3 cups flour
  • 3/4 cups molasses
  • 1/4 cup sugar
  • 1/4 cup oil
  • 1 egg
  • 1 tablespoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

Directions

Mix ingredients. Chill in refrigerator at least 30 minutes.
Preheat oven to 375 degrees.
Roll dough to 1/8 inch thick and cut with cookie cutters. Place at least an inch apart on a baking sheet.
Bake at 375 degrees for approximately 10-12 minutes.
Let cool and decorate as desired.

  1. Oh My Gosh! These are so stinking cute! I have a daughter, so when she was young it was all about Barbie and girl things. These ninjas would have been fun to make. They look great! Thanks so much for being a part of the Fill The Cookie Jar group! I love seeing what you create!

    1. Sometimes I’d like a break from TMNT and Super Mario for Barbies and all things pink. But, I have been told stepping on Barbie shoes hurts as much as ninja weapons.
