Four simple ingredients and about 15 minutes is all you need to make this delightful Thai treat. It is the perfect way to top off a spicy Thai meal.
The recipe comes from one of my favorite thrift store finds: The Yul Brynner Cookbook. It has delicious recipes from his heritage (Russian, Chinese, Japanese, Gypsy and Swiss) plus a section with food from one of his most famous roles: The King of Siam (now known as Thailand).
Brynner used coconut cream like you would use for a Pina Colada, which is presweetened, and adds more sugar. Most online versions of the recipe use coconut milk, and I followed suit.
What Type of Bananas to Use
You can use Cavendish, the ones you typically find in the grocery store. But, if you have an Asian market nearby, try to get some Thai bananas. They are smaller, sweeter and more aromatic. Basically, more "banana-y" Which are perfect for this dish.
You can cut them any way you want. Some use 1 - 2 inch slices. Some use larger pieces. Don't overthink it. Cut them anyway you want.
Ingredients for Bananas in Coconut Milk
Besides the obvious bananas and coconut milk, you will also need some sweetener and a splash of vanilla extract. For a balance to the creamy sweetness, a pinch of salt is often added.
Traditionally palm sugar would be used in Thailand, which could be hard to find in some areas. There are plenty of suitable substitutes:
- coconut sugar
- turbinado sugar
- jaggery
- muscovado
- light brown sugar

Ingredients
- 3-4 ripe bananas
- 1 can coconut milk (13+ ounce size)
- ¼ cup palm sugar (or light brown sugar)
- ¼ teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Peel then slice bananas in 1-2 inch slices, or as desired.
- In a medium saucepan, heat coconut milk and sugar (plus salt, if using) over medium heat until sugar is dissolved and mixture is hot.
- Add bananas and vanilla. Stir to combine. Heat another few minutes until bananas are heated throughout.
- Serve immediately in bowls.
