Just before Halloween, J decided he wanted a gingerbread house. While I have a great recipe with a pattern I wasn't quite ready to bake one yet, especially when he meant he wanted it NOW and not an hour or more to mix bake and cool. So, I just added a few simple ingredients to a basic pancake recipe to make these Gingerbread Pancakes. Happily, they satisfied his request.
I used my standard homemade baking mix, but you can use store-bought, or even a gluten-free mix. J can be persnickety about spices at times so I only added a ¼ teaspoon of each. If it doesn't seem like enough to you, add more.
You can make them basic round shape or make large pancakes then use cookie cutters to cut them in any desired shape. I used my Tovolo Pancake Pen to create some gingerbread houses and gingerbread men.
The last tip I have is to monitor the heat carefully. The addition of the sugar in the molasses makes them burn more quickly. I'd recommend starting the pan at a slightly lower temperature than you normally cook pancakes and adjust from there.
