These Mulled Apple Cider Cookies are the perfect Autumn treats, combining apple cider, cinnamon and allspice in a sweet little cookie.
This recipe takes a bit longer than some cookie recipes because you start by cooking the apple cider with warm spices until it is nice and thick.
Instead of vanilla extract or other flavorings, the apple cider syrup is the flavor base for the cookie and the icing.
The result is an amazing burst of apples and spices in every bite!
Apple Cider versus Apple Juice
Apple Cider is fresh and raw and usually, unpasteurized. Apple Juice is filtered and pasteurized, making it sweeter and clearer with a longer shelf life.
I made these cookies with cider, but you can use apple juice if that is what you have.
Ingredients for Mulled Cider Cookies
Aside from the apple cider, these cookies are made with basic baking ingredients. Everything should be easy to find.

- all purpose flour
- ground cinnamon, baking powder and baking soda

I've never had a cookie with apple cider. I love both cider and cookies, so I can't wait to give your recipe a try.
Audrey
I hadn't had anything like this before either. Cooking down the cider intensifies the flavors so you can really taste it when the cookies are done.
