    Healthy White Bean Alfredo: Guilt-Free Vegan Twist

    Alfredo sauce is one of my all time favorite sauces. I have loved it since I first tried it as a teen at a restaurant on Cannery Row in Monterery, California.

    Besides being healthier and cheaper than traditional Alfredo sauce, this "Faux Fredo" whips up in a matter of minutes. Perfect for a quick weeknight meal.

    The roasted garlic taste is amazing!

    Is Faux Fredo as good as real Alfredo Sauce?

    I have to be honest. As delicious as it tastes, it is missing the gooey cheesiness of true Alfredo.

    If you aren't going vegan, you can add some Parmesan cheese when heating the sauce for a texture closer to the original.

    White Bean Alfredo Sauce Ingredients

    The ingredients in this sauce are pretty basic pantry ingredients:

    white beans - white, navy, northern, cannellini, etc.

    olive oil - or other vegetable oil

    garlic cloves - no, garlic powder won't do

    vegetable broth - chicken broth if you aren't going vegan

    non dairy milk - soy, almond, or any you prefer

    nutmeg - this is optional, but traditional alfredo sauce is served with it. Fresh is best, but not everyone has nutmeg nuts sitting around.

    Ingredients
     

    • 1 can 15 ounce white beans (cannelini, navy, small white, etc.)
    • 1 tablespoon olive oil
    • 2 cloves garlic (minced)
    • Β½ cup vegetable broth
    • ΒΌ cup almond or soy milk
    • freshly ground nutmeg (optional)

    Instructions
     

    • Drain and rinse white beans several times.
    • Heat olive oil in a medium saucepan. SautΓ© garlic for 1-2 minutes.
    • In blender or food processor combine garlic, white beans, stock and milk until smooth.
    • Pour bean mixture into saucepan, and heat thoroughly. Serve over pasta with freshly grated nutmeg, if desired.

      I cannot wait to try this recipe. I'm assuming the first ingredient is supposed to say cannelini or northern beans. Great idea, thanks for sharing.

      I've kinda always preferred white sauce to red, so I love the idea of using white beans to make alfredo sauce...and yay for garlic! *-*
