    Lemon Pound Cake with Lavender Glaze Beautiful (but Easy) Dessert

    Lemon Pound Cake with Lavender Glaze is the perfect combination of zesty lemon and floral lavender wrapped in a rich buttery cake.

    This mouthwatering Lemon Pound Cake with Lavender Glaze combines tart lemon and floral lavender combine in a moist rich cake guaranteed to make any occasion special.

    With its delicate floral notes and tangy citrus burst, this delectable dessert is sure to be a hit with everyone.

    What does lavender taste like?

    Lavender tastes the way it smells; lightly floral and woody. Some say it has hints of rosemary and mint with a bit of citrus. These flavors all make it a great pairing with lemon's sweet and tart notes.

    I have several lavender bushes that I know have never been treated with any chemicals, making them safe for culinary use. If you want to use real lavender blossoms, either fresh or dried, be sure they are organically grown unless you want a mouth full of pesticides.

    You can also opt use Taylor and Colledge lavender extract paste, a little goes a long way.

    Natural Food Dyes

    My family doesn't really like artificially colored foods or medicines. I believe my son and I are overly sensitive to them. I swear I can taste a weird chemical aftertaste, especially red, in many commercial products.

    When I got the Purple Sweet Potato Powder from Selefina I knew I wanted to use it as a food dye. Just a pinch was all that was needed to get the color I was going for.

    If you don't have any, you can use a few drops of red and blue liquid coloring to achieve the desired color.

    What type of lemons to use for lemon pound cake?

    This recipe is made extra special with Meyer lemons from Melissa's Produce. Meyer lemons are a cross between lemons and mandarin oranges. This gives them a sweeter taste with a thinner peel compared to other lemons.

    You can use other lemons such as Lisbon or Eureka (often just labeled as "lemons" at the grocery store). The cake will be a bit more tart, but you can add a bit more sugar if desired.

    What type of pan to use for Lemon Pound Cake?

    Although it is a cake, pound cake is almost always baked in a loaf pan.

    The recipe below calls for one 8.5 x 4.5 inch loaf pan. You can use a larger 9 x 5 inch loaf pan or three small individual pans (like I did). Baking in either of these pans will be faster so you will need to start checking for doneness after 20 minutes.

    Ingredients
     

    Lemon Pound Cake

    • 1 cup butter
    • 1 ΒΎ cup all purpose flour
    • 1 teaspoon baking powder
    • 1 Β½ cup sugar
    • 2 tablespoons lemon zest
    • 2 teaspoons lemon juice
    • 4 large eggs
    • 1 Β½ teaspoons vanilla extract

    Lavender Glaze

    • 1 cup powdered sugar
    • Β½ teaspoon lavender extract
    • 2-3 tablespoons milk
    • purple sweet potato powder or food coloring
    • lemon slices and/or fresh organic lavender blossoms

    Instructions
     

    • Preheat oven to 350℉. Grease and flour a 8Β½ by 4Β½ inch bread pan.
    • In a small bowl melt butter in microwave, or in a small saucepan on the stove. Let cool.
    • In a mixing bowl, whisk together flour and baking powder, set aside.
    • In the bowl of a food processor, add sugar and lemon zest. Pulse 4-5 times to combine. Add lemon juice, eggs and vanilla extract and pulse a few times to combine.
    • Whisk the cooled butter to blend the milk solids back in. While the food processor is running, drizzle the butter into the sugar mixture.
    • Fold the liquid mixture into flour mixture until just combined. Pour into the prepared loaf pan.
    • Bake for 15 minutes at 350℉. Reduce temperature to 325℉ and continue baking until lightly golden and toothpick inserted in center comes out clean, about 30 minutes.
    • Remove pound cake from oven, let cool on a wire rack for 10 minutes. Then remove from pan and let cool completely.
    • In a small bowl, add powdered sugar, lavender extract and a tablespoon of milk. Adjust to desired consistency with additional milk if desired. Tint to desired color with purple sweet potato powder or food coloring.
    • Place pound cake on serving plate, drizzle glaze over cake. Decorate with lemon slices and lavender blossoms (optional).

      Your pound cake looks moist and tender. And that glaze on top looks so pretty! That potato powder is going to be a fun ingredient to play with.
