Are you tired of sacrificing taste for health when it comes to baked goods? Look no further than these delectable reduced fat Lemon Blueberry Scones. These tasty treats are packed with juicy blueberries and zesty lemon flavor, but with a healthier twist.
With just a few simple substitutions you can have the perfect balance between taste and health with these irresistible scones.

Traditional scones are like American biscuits with loads of extra fat and sugar. The result is a tender flaky crumb that melts in your mouth.
I adapted this recipe from one of those little Betty Crocker magazine cookbooks at the checkout of the grocery store. The lemon yogurt helps keep the tender scone texture without the extra fat.
While this recipe reduces the fat, it still uses butter and whipping cream (or half and half). Eliminate or swap those at your own risk. Going too low in fat will likely result in a hard crumbly texture.
Ingredients for Lemon Blueberry Scones
Scones do not need any special hard to find ingredients. For full flavor, you do want to choose fresh blueberries and a fresh lemon for the zest.
- all purpose baking mix with leaveningΒ (aka Bisquick)
- sugarΒ (or sugar substitute for baking)
- powdered sugar
- cold butter
- egg
- lemon yogurt (or plain yogurt plus lemon juice and sugar)
- heavy whipping cream (or half and half)
- fresh lemon juice and grated lemon peel
- fresh blueberriesΒ
Can you make these gluten free? I have not tried personally. As long as your gluten free baking mix has leavener (like baking powder) then you should be fine.

SCONES
- 2 Β½ cups all purpose baking mix with leavening (aka Bisquick)
- β cup granulated sugar (or equivalent sugar substitute)
- 2 tablespoons cold butter
- 1 egg
- 6 ounces lemon yogurt (or plain yogurt plus 1 tablespoon lemon juice and 1 tablespoon sugar)
- ΒΌ cup heavy whipping cream
- 1 tablespoon grated lemon peel (use more if using plain yogurt/lemon juice combo)
- Β½ cup fresh blueberries
- 1 tablespoon heavy whipping cream (or half and half)
- 1 tablespoon granulated sugar
DRIZZLE
- Β½ cup powdered sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel (optional)
Instructions
- Heat oven to 400β. Spray a cookie sheet with baking spray.
- In a large bowl whisk together baking mix and β cup sugar. Cut in cold butter with a pastry blender or fork until crumbly (bits of butter are good!)
- In a small bowl whisk together egg, yogurt, ΒΌ cup whipping cream and lemon peel. Add to the baking mix mixture until just combined. GENTLY, fold in blueberries without breaking them if at all possible (they look better this way!)
- Place dough on the prepared cookie sheet and shape into an 8 inch circle. Brush dough with 1 tablespoon whipping cream, then sprinkle with 1 tablespoon sugar. Dip a sharp knife into additional baking mix (or flour) and cut circle into 8 wedges, but do not separate.
- Bake until golden brown, approximately 15-20 minutes. Recut wedges along the lines you made before baking and gently move to a rack to cool for 5 minutes.
- In a small bowl combine powdered sugar, lemon juice and additional lemon peel, if using. Drizzle over the scones and serve warm.

I really love scones! And, I love how you adjusted to make them healthier. I definitely need to check out your homemade bisquick mix. I don't buy it because it is expensive and I think making it from scratch would be much healthier. Thanks for posting!!
