What is a Clafoutis (Clafouti)?
A Clafoutis, sometimes spelled Clafouti in English speaking countries, is a thick custard dessert topped with fruit, usually cherries or other stone fruit.
It is prounounced klæf.uːˈti. Or for those of us that don't speak phonetics "cla foo tee". The s is silent if it is there, which is probably why English speaking countries dropped it.
Some people describe the texture as a cross between a custard or pudding and a pancake.
What type of fruit to use on top of a Clafoutis?
Use whatever fruit you want.
In France it was originally made with cherries. I kept with the stone fruit family for this recipe, but I have also seen citrus, pears, berries, and even dried fruits used.
What are the ingredients in a Clafoutis?
You probably already have the ingredients on hand. Besides the fruit for the top you will need:
- eggs
- milk
- flour
- sugar
- vanilla or almond extract
- salt
To make it gluten free, almond flour would pair nicely with the stone fruits. You could also swap in a dairy free milk and even some egg substitute for vegan preparations.

Recipe
Ingredients
- 4 large eggs
- 1 cup milk
- ½ cup flour
- ⅓ cup sugar
- 1 teaspoon vanilla or almond extract
- ⅛ teaspoon salt
- 2 cups stone fruit such as peaches, plums, cherries
- powdered sugar (for serving)
Instructions
- Preheat oven to 400°F. Grease a 10″ pie pan or other shallow baking dish.
- Place the pan on a flat baking sheet to make getting it in and out of the oven easier and to catch any overflow.
- Whisk together all ingredients except the fruit and powdered sugar.
- Pour into the prepared pan.
- Arrange fruit on top of the batter.
- Bake at 400°F until golden brown around the edges and the center is set, about 20-25 minutes.
- Serve warm with powdered sugar dusted on top.
