Imagine the colors of red, white, and blue burst together, creating a patriotic palette on your plate. Whether it's for a special occasion or simply to add a bit of color to your morning routine, these Red White and Blue Crepes are sure to impress.
Luckily, they are healthy and so easy to make. You can even prep the ahead of time and assemble just before serving making them perfect for stress free entertaining.

Prepared Crepes or Homemade Crepes?
You can make these simpler by buying packs of premade crepes. Our stores usually keep them in the produce section.
When I make my own, I double the batch and freeze half so I can easily heat them when needed for recipes like this.
I have several different crepe recipes on the blog including basic crepes, sourdough crepes (great way to use sourdough discard) and even chocolate crepes. While the chocolate may not fit the theme of "red white and blue" they are delicious with the ricotta filling and fruit.
Are crepes for breakfast or dessert?
Both. Crepes can also be made savory for lunch or dinner. These would be delightful either first thing in the morning or after an Independence Day meal.
If you want to add some French culture to the mix, make them to celebrate Le Quatorze Juillet, marking the anniversary of the storming of the Bastille and start of the French Revolution on July 14.
Ingredients for Red, White and Blue Crepes
Besides the crepes the ingredients are easy to find and substitute:
- ricotta cheese
- sweetener (powdered sugar, sugar free substitute of your choice, or omit)
- fresh or frozen fruit
DO NOT get hung up on amounts or measuring the ricotta and sweetener and fruit. Make this to your taste. If the fruit is ripe and sweet you may not want any sweetener. Estimate the amount of filling on each crepe based on how many servings you want to make out of it. You will get less filling if you make more crepes and vice versa.
Obviously, you want red and blue fruits if you are doing the patriotic theme, but if you want to make it with peaches or melon in the summer, or some apples and pears in fall/winter you have my permission.
How to fold crepes
Don't overcomplicate this recipe. Fold, or roll or stack them anyway you want. some options:
- put a crepe in the center of a serving plate, spread on some ricotta filling and some fruit, and repeat until you have used them all, cut like a cake and serve.
- put the crepe on a plate add some filling and fruit in the middle and roll like a cigar.
- put the crepe on a plate, cover with some ricotta filling place the fruit in one quarter only, fold the half without fruit over the top and then fold the remaining half without fruit over to make the quarter fold.

Ingredients
- 8-12 crepes (premade or see recipe below)
- 15-16 ounce ricotta cheese
- 2-3 tablespoons powdered sugar (more or less to taste)
- 1 pint fresh or frozen blueberries
- 1 pint fresh or frozen raspberries and/or strawberries (hull and quarter or slice strawberries)
Instructions
- Prepare crepes ahead of time.
- In a medium bowl combine fruit and 1 tablespoon sugar more or less to taste depending on the sweetness of the berries. Set aside until ready to serve.
- In a medium bowl combine ricotta and 1 tablespoon sugar more or less to taste depending on the sweetness of the berries. Set aside until ready to serve (refrigerate if not serving immediately)
- To fold the crepes as pictured:put a crepe on a plate, cover with some ricotta filling, place some fruit in one quarter only, fold the half without fruit over the top and then fold the remaining half without fruit over to make the quarter fold. See blog text above for other options.
- Top with a teaspoon or more of filling plus some berries. Sprinkle with additional powdered sugar or drizzle with the syrup in the bowl of berries after the are sugared.
