Lime Pink Peppercorn Cookies are a unique treat with a burst of citrus and light peppery kick.

These cookies are so addicting! I almost ate half a batch on my own in one day.
Adding pepper to sweets might seem odd to some, but once you try it you might just be hooked.
You only want to add enough for a slight peppery aftertaste, not an overwhelming amount that overpowers the other tastes.
Alternatives for Lime and Peppercorn Cookies
Besides the basic baking ingredients of flour, sugar, egg, butter and vanilla these cookies get their unique taste from lime and pepper.
key limes: I used key limes for this, which can be a tad annoying to zest. But they are more aromatic and less acidic than Persian limes or other limes which is perfect for this recipe. Any fresh lime will work in this recipe.
pink peppercorns: Pink peppercorns have a fruitier citrus taste with a slight heat to them, as opposed to black peppercorns or other pepper. And the pink looks so pretty with the lime zest. If you use black pepper, reduce the amounts by at least half and add more to the icing if you want more.

Recipe
Ingredients
- ½ cup butter
- 1 cup sugar
- 1 large egg
- ¼ cup milk
- ¼ teaspoon vanilla extract
- 2 tablespoons lime zest
- 1 teaspoon pink peppercorns (crushed with mortar and pestle)
- 2 cups flour
- 2 teaspoons baking powder
- 2 cup powdered sugar
- 1-2 tablespoons fresh lime juice
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper or silicon baking mats.
- In a large mixing bowl beat butter and sugar with an electric mixer until fluffy and light, about 3-5 minutes pausing to scrape bowl a few times..
- Beat in egg, milk and vanilla.
- In a small bowl combine lime zest and crushed pink peppercorns. Reserve ¼ teaspoon for icing.
- In a medium bowl whisk together flour and baking powder and all of the lime zest and peppercorns except ¼ teaspoon.
- Slowly add dry ingredients into butter mixture on medium speed just until incorporated.
- Scoop by tablespoonful onto prepared baking sheets leaving 2 inches between.
- Bake until light golden brown, about 10 minutes. Remove cookies from pan to a cooling rack to allow cookies to cool completely.
- When cookies are cool, combine powdered sugar, ¼ teaspoon lime zest and peppercorn, and lime juice. Spread glaze over cookies and allow to set.
