It's summer and you want something sweet but not too rich because it's swim suit season. And you definitely don't want to heat the house. What to do?
Consider this Avocado Pie.
Yes, avocados in a dessert. Is your mind blown? I know most of us only think of avocado in savory dishes, but their creamy texture and mild taste make them absolutely fabulous in sweets as well..
Get ready to impress with this creamy dreamy pie made with an almond coconut crust and a simple no bake naturally green filling.
Not only is this Avocado Pie a decadent creamy dessert it also happens to be gluten-free, dairy-free, and refined sugar-free.
The avocado provides a rich creaminess with fantastic flavor provided by the maple and vanilla paired with the almond coconut crust. Top it with frozen or fresh berries for a naturally dramatic presentation or go with some whipped cream.
Enjoy this within 24 hours as the avocado will turn brown.
Ingredients for Avocado Pie
For the crust:
- almond meal (or raw almonds ground in food processor)
- unsweetened shredded coconut
- pitted dates
- coconut oil
For the pie
- avocados
- maple syrup (or agave syrup or honey)
- vanilla extract
- coconut oil (butter flavor is delicious!)
- fresh or frozen berries for topping
Normally, I would say you can substitute something else for the coconut oil, but in this recipe you really need it to help hold the pie together. Coconut oil is a solid below 75F (24C). Adding it to the avocados and chilling makes the filling firmer.
