This Spicy Apple Chutney might look like chunky apple sauce at first glance but it is loaded with so many more flavors like onion, spicy garlic, aromatic spices plus a little sweety and sour to make it a bit more complex and fabulous.

    What is chutney?

Chutney is a fruit (or vegetable) spread with added vinegar and aromatic spices that originated in India. It is a lovely tangy sweet spiced combination. Some are spicy hot and some are made without peppers to balance out a spicy meal (like curry).

How to serve Spicy Apple Chutney?

Chutney can be used in a variety of ways besides the traditional accompaniment to dishes like curry (here's an easy 30 minute recipe). Other ideas to try:

    • as a spread on sandwiches (grilled cheese!), crostini or crackers.
    • with a cheese tray or charcuterie board
    • spread it on a block of cream cheese or brie and serve with crackers for a quick appetizer.
    • as a glaze for roast or poultry (apples and pork are a natural pair)
    • serve on roasted or steamed vegetables (this would be great with root veggies or winter squash)
    • a dipping sauce for chicken strips, tempura, fondue, etc.

    Ingredients

Everything is easy to find at your grocery store. The garlic chili sauce should be in the Asian aisle. It can have a kick to it, so start with a small amount and add more after it has cooked if you think it needs it.

    • apples (your favorite kind)
    • whole orange
    • red onion (yellow or brown if that's what you have)
    • fresh ginger (fresh is best, or 1 teaspoon powdered)
    • olive oil
    • apple cider vinegar
    • honey
    • garlic chili sauce (substitutes: sriracha, sambal oelek or any pepper sauce with a little minced garlic)
    • ground cinnamon, ground cloves, cumin seeds, salt

    Ingredients

    • 1 tablespoon extra virgin olive oil
    • Β½ medium red onion (chopped)
    • 1 tablespoon fresh ginger (finely minced)
    • 1 teaspoon ground cinnamon
    • Β½ teaspoon ground cloves
    • Β½ teaspoon whole cumin seeds
    • ΒΌ teaspoon salt
    • ΒΌ cup apple cider vinegar
    • β…“ cup honey
    • 1 teaspoon garlic chili sauce
    • 4 large apples (cored and peeled)
    • 1 large whole orange (zest first, then peel (discard), and rough chop the fruit)
    • 1 tablespoon orange zest

    Instructions

    • In an electric pressure cooker, select the β€œSauté” function and adjust to highest setting (for stove top cooker, heat over medium high heat.
    • Add olive oil. Once hot, add the red onion, ginger, cinnamon, cloves, cumin seed, and salt. Stir to combine and sautΓ©, stirring occasionally, until the onion is soft and translucent and the spices are fragrant, about 4-5 minutes.
    • Add the cider vinegar and gently scrape the bottom of the pot with a spatula to loosen any browned bits (deglaze). Stir the honey, garlic chili sauce, apples, orange, and orange zest.
    • Cover and lock the lid into place. Make sure the pressure valve is set to β€œSealing” and pressure cook on high for 3 minutes. For electric cooker, use "manual" and set for 3 minutes; for stove top cooker, time for 3 minutes once it reaches pressure.
    • When the cook time is complete, allow pressure to release naturally for 5 minutes. Then do a quick release for any remaining pressure. Remove the lid away from yourself.
    • Select the β€œSauté” function (or turn the stove back to medium high) and bring the mixture to a gentle boil. Cook while stirring frequently, until the mixture thickens, and the excess liquid is reduced, about 1-2 minutes.
    • Serve immediately or store in airtight containers in the refrigerator for up to one week.
