Cinnamon Sugar Palmiers are a delicious crunchy and sweet treat, that are quite impressive, but quite easy to make. Plus they are made with just three ingredients and can be ready in about 30 minutes.
Bake some up for an easy homemade gift, a bake sale. to add to your holiday cookie tray, or when last minute guests pop by.
Palmiers were originally created by pastry chefs as a way to use leftover puff pastry dough.
If you have never made laminated dough it can be a bit tedious: roll out dough with butter, fold, roll out again, chill in the fridge for awhile then fold and roll, rinse and repeat. No one would want to waste that effort.
Luckily, you can make these crispy little gems with premade puff pastry instead of making your own pastry dough. Pick it up on sale and keep it in the freezer to whip a variety of items whenever you need them.
Why are they called Palmiers?
Palmiers (pronounced "palm ee yay") means "palm leaves" in French, because they look like palm leaves as they unfurl. They are also called elephant ears, shoe-soles, butterfly wings and pig's ears.
Ingredients for Cinnamon Sugar Palmiers
There are only three ingredients:
- puff pastry dough
- granulated sugar
- ground cinnamon
You can omit the cinnamon and just use sugar if you prefer to make the traditional version.
But, the cinnamon sugar adds a nice touch, especially around the holidays.

Ingredients
- 1 cup granulated sugar
- 3 tablespoons ground cinnamon
- 2 sheets puff pastry
Instructions
- Preheat oven to 450℉. Line several baking sheets with parchment paper or silicone baking mats.
- In a small bowl, combine cinnamon and sugar.
- Sprinkle ½ of the cinnamon sugar on a clean work surface. Place a sheet of puff pastry on top of the cinnamon sugar, then sprinkle about ¼ cup of cinnamon sugar on top. Roll out to a 13 inch square, pressing the cinnamon sugar into both sides.
- Fold one side of the pastry in ¼ of the way. Then fold again to the halfway point. Repeat on the other side. Fold both sides together, like a book.
- Slice in ⅜ inch slices with a sharp knife and place cut side up on a prepared baking sheet leaving 3 inches between.
- Bake at 450℉ for 6 minutes until caramelized and brown on the bottom . Flip cookies over and bake for another 3-5 minutes until the other side is caramelized.
