    Chocolate Raspberry Truffles: Easy Candy Recipe

    Chocolate Raspberry Truffles are a decadent treat. No one needs to know how easy they are to make.

    Decadent Chocolate Raspberry Truffles are an easy candy that make a wonderful hostess or teacher gift. Or make them just for you and your family.

    This recipe is a variation on the classic Oreo Truffle. You can use vanilla or chocolate cookies, or any flavor variation you choose. The batter is very soft, so you don't want to leave them out of the fridge for a long time unless you dip them in chocolate melting wafers.

    Ingredients
     

    • 1 cup semisweet chocolate chips
    • 1 8 ounce package cream cheese, softened
    • 36-48 vanilla or chocolate wafers with creme (finely crushed)
    • β…“ cup seedless raspberry jam
    • toppings such as finely chopped almonds, coconut, cocoa powder, chocolate sprinkles or chocolate melting wafers

    Instructions
     

    • Melt chocolate chips until completely melted and smooth. Allow cooling slightly.
    • In a large mixing bowl, combine melted chocolate, cream cheese and raspberry jelly. Fold in cookie crumbs being sure to coat all the crumbs thoroughly.
    • Cover and refrigerate 3 to 4 hours or until firm.
    • Roll by tablespoonful into a ball then roll in the topping(s) of your choice. Store in the refrigerator.
