Looking to bake up something a little different this holiday season? Honey Lace Cookies are decadent crispy cookies that provide a bit of golden deliciousness to your Christmas cookie tray.
These honey lace cookies are delicate lacy, crispy and golden. It's almost like eating candy when you bite into them.
You can curve the cookies by placing them over a rolling pin while they are still warm. You can also chose to dip in some chocolate (either one end or the bottom of the cookie) or drizzle chocolate over the top.
No matter which option you chose these cookies will be a hit.
Tips for Honey Lace Cookies
Tip#1: If you've never made lace cookies before the most important thing to know is they spread a lot.
When I say in the directions to drop by teaspoonful, 4 inches apart. I mean use a teaspoonful of batter and leave at least 4 inches for them to spread. Not a tablespoonful and not closer.
Tip #2: Use good honey. I always use raw unpasteurized honey because it has more nutrients and no added sugars, unlike "regular" or pasteurized honey (source).
When I can get to the Farmer's Market or special stores that carry it, I get local honey. We have a couple of local brands that harvest honey from bees that have pollinated avocado, orange blossoms or wildflowers. They all taste slightly different.

Ingredients
- ¼ cup butter
- ¼ cup honey
- ½ cup powdered sugar
- ⅛ teaspoon salt
- 3 tablespoons flour
Instructions
- Preheat oven to 350°F. Line 2 flat rimmed baking sheets with parchment paper.
- In a medium saucepan, melt butter and honey over medium heat. Whisk in sugar and salt. Whisk in flour until no lumps remain.
- Transfer to a small bowl and let cool slightly, about 5 minutes.
- Spoon 1 teaspoon honey mixture onto sheets about 4 inches apart (they will spread a lot).
- Bake until dark golden brown and small holes appear throughout, about 10 to 12 minutes.
- Let cool on tray until they start to firm up, 2 to 3 minutes. While cookies cool, use a knife to separate any cookies that have melted together and to shape into a circle.
- OPTIONAL: Carefully peel a few cookies at a time and lay over a rolling pin. Let cool on pin until completely crisp, about 3 minutes. If cookies get too firm before you can shape them, put baking sheet back in oven for 1 minute.
- OPTIONAL: Dip cookies in melted chocolate or drizzle melted chocolate over the top.
