Picture this: a savory, golden brown frittata being pulled out of the oven, filled with succulent shrimp and vibrant spinach. This Shrimp and Spinach Frittata is a lovely combination of protein, greens, and flavor.
Whether you're a seafood lover or just looking to switch up your brunch routine, this recipe is for you.
Frittatas are deliciously simple to make, and this one cooks up in one pan so there is less to clean. I used my trusty cast iron skillet to easily go from stovetop to the final bake in the oven. But, you can use any oven safe skillet.
What is the difference between a frittata and a quiche?
Frittatas are from Italy and quiches are from France. Both are egg bakes with "stuff" in them, but there are a few differences between quiche and frittata.
Quiche generally has a pastry crust while frittatas are crustless.
Frittata adds little to no milk (like this recipe) while quiche uses up to ½ cup milk or cream per egg.
And quiche is usually cooked in a pie pan and baked entirely, while frittatas can be cooked in a skillet and cooked partially on the stove before baking.
Ingredients and Variations for Shrimp and Spinach Frittata
I used just a few simple ingredients for this dish:
- eggs
- milk
- raw shrimp
- fresh spinach
- Parmesan cheese
- olive oil, salt and pepper
Add other ingredients as you desire, mushrooms, onions, bell pepper, leftover meats and cheese, etc.
To make this dairy free: use your favorite non dairy milk
To make this vegan: omit the shrimp, and use your favorite vegan egg substitute, dairy free milk, and nutritional yeast for the Parmesan cheese and add in other vegetables (mushrooms would give it a nice umami feel and pairs wonderfully with spinach)
When eggs are expensive, you may want to try replace the eggs with
- 1 cup chickpea flour
- 14 ounce package of firm tofu AND reduce the milk to ¼ cup
I have not personally tried either one of these substitutes.

Ingredients
- 5 large eggs
- 1 cup milk (any kind)
- salt and pepper to taste
- 1 tablespoon olive oil
- 8 ounces raw shrimp (cut into bite-sized pieces)
- 4-6 ounces fresh spinach (cut in bite-sized pieces if needed)
- 2 ounces Parmesan cheese (grated)
- 1 avocado (optional)
Instructions
- Preheat oven to 350℉.
- In a medium bowl mix eggs, milk, salt, and pepper. Set aside.
- Heat an oven-proof skillet over medium heat. Add olive oil and coat the bottom of the pan.
- Cook shrimp until turning pink, about 2 minutes. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and quickly stir in eggs and cheese.
- Grab a pot holder and immediately move the skillet to the preheated oven and cook until eggs are set on top, about 10 minutes.
- Serve with avocado slices on top, if desired.
