These Gluten Free Chicken Lettuce Wraps from Good for You Gluten Free were incredibly delicious and better yet, ready in less than 30 minutes.

I discovered Good for You Gluten Free through a fun blogging group called #FoodBloggerLove organized by the crew at The PinterTest Kitchen. Allison organizes several events throughout the year for Food Bloggers (including Choctoberfest!). The idea behind Food Blogger Love is for each of us to explore the recipes of another blogger and then to share the love with our readers. Good for You Gluten Free is written by Jenny Finke, who was diagnosed with Celiac Disease in 2012. She describes the mission of her blog:

Good For You Gluten Free is more than just another gluten-free blog; rather it’s a place where you can feel good about being gluten-free and find inspiration and support whether you’re starting your gluten-free journey, or whether you’re simply stopping by along the way.

Good for You Gluten Free Recipes and Tips

While we do not need to go gluten free in our house, the recipes on her site are so scrumptious looking we’d eat them anyway. A few I pinned to make later:

  • Gluten-Free California Rolls (her latest recipe)
  • Gluten-Free Bagels with Almond Flour
  • Gluten-Free Rosh Hashanah Honey Bundt Cake
  • GF Cranberry Spinach Dog Biscuits

Jenny also offers great articles to help you live better. One of my favorites was 12 Highly Effective Habits of Healthy Gluten-Free Dieters. Many people and companies are jumping on the gluten free bandwagon thinking that being gluten free alone will magically make you healthy. She explains that gluten free is just one component.

Gluten Free and Celiac Counseling

Besides her amazing recipes, Jenny offers her nutritional coaching expertise with Gluten Free and Celiac Counseling, both in the Denver area and virtually. If you have been diagnosed with Celiac Disease, or think that converting to a gluten free lifestyle will benefit your health, I would check out her site and consider her consultations. You’d be surprised at all of the little things you need to do to get the gluten out of your kitchen. Jenny can help.

 

Gluten Free Chicken Lettuce Wraps

Out of all of the recipes on her site I started with this one for a few reasons:

  1. I was hungry and didn’t want to wait to eat and
  2. I have lots of lettuce from my latest CSA delivery and didn’t want another salad ; )

To start, you pulse some chicken breast and thighs in the food processor a few times. This technique rough chops the chicken but doesn’t grind it up. Love this trick and will be using it again! Then a quick marinade and stir fry in on the stove and it was ready.

    mmmmmmmmm — lettuce wraps are my favorite ways to eat the sandwiches & tortilla wraps I used to love. Your photo of the wraps is beautiful!

    This is the perfect recipe. Delicious whether you can have gluten or not. I like to have options like this when I am entertaining just in case some of the guests are gluten intolerant.
